It's one of my favorite things to happen during barrel tastings: finding barrels that we've sort of forgotten about and have them taste amazing. For this batch, we blended two puncheons of 11-month old Undertone and Funky Blender. It has a delicate acidity and the complexity on the nose is just amazing. Super drinkable and refreshing.
