Our favorite time of year is Palisade Peach Harvest. We started with very flavorful saison yeast strain and put it to work on a traditional French saison malt bill. Near the end of fermentation, we rewarded the yeast with a deluge of pureed peaches and chardonnay grapes to make this harvest season celebration brew.
