Lunas

The farmers in Hatch Valley New Mexico are also the Lunas. They too seek a spiritual connection and understanding with the llano. To bring the essence of the roasted hatch chili to your glass we started with a distinct, yet pliable base recipe. We chose a blonde stout—a style that will accentuate the fresh chili flavor and balance it against the malt. A full- bodied malt profile is rounded by the addition of cocoa nibs and a touch of coffee. Soft winter wheat is used to add texture. In the fermentor, we added bushel upon bushel of fresh fire roasted New Mexico Hatch chilies. The end result is a golden beer with an approachable stout profile complete with layers of robust chocolate and coffee flavors blended perfectly with the rich, earthy smoke and spice flavor of the roasted hatch chilies.
