Carrate Cake

This carrot cake kettle sour is a collaboration with Tattered Flag Brewery and Still Works in Pennsylvania. This brewery is veteran owned and operated and we appreciate their military level of precision in brewing and their burgeoning sour program with unique ingredients. The mission: creating a beer that has characteristics similar to carrot cake. Difficulty level: high. Too much or too little of any ingredient could throw the balance off entirely. Our approach: simple Berliner Weisse base with pilsner malt, wheat malt, and a touch of oats. Carrot cake simulation: 100 lbs. of carrot juice, rich dark brown sugar, golden molasses, and lactose. Restrained usage of nutmeg and cinnamon.
